Almond Cherry Pancakes


Since eating Paleo I have tried a few different pancake recipes.  The first thing I noticed about Paleo pancakes is that they were difficult to flip and don't stay together unless you overcook them.  These are the first Paleo pancakes that I had no trouble flipping and are the closest to actual pancake texture.
*Dairy-free, Gluten-free, and Grain-free. Paleo approved.

Almond Cherry Pancake Recipe
Makes 10 medium-sized pancakes 

Ingredients: Banana, eggs, chocolate almond butter/almond butter, coconut oil, and ghee{butter}

 Blend together: 
•1 banana 
•2 eggs 
•4 Tbsp chocolate almond butter {or just regular almond butter}  

In a large skillet, cook in a mixture of  coconut oil/butter on medium for 2-4 minutes on each side. Then top w/ fruit, honey, maple syrup or however you like your pancakes!  The pancakes pictured above are topped with stewed cherries.

Quick Stewed Cherries
Makes 1/2 a cup

Ingredients: Cherries, water, and stevia 

In a small pan heat over medium:
•1/2 cup frozen cherries {Costco has delicious ones} 

Cook covered until cherries are completely thawed out, approx. 3-5 minutes.  Then place in a blender.  Add enough water to allow cherries to blend.  Sometimes you won't need to add any.  Don't blend too much, just enough so there are not large chunks  Then pour the cherry mixture back into the pan and turn the heat up high and bring to boil.  Boil until mixture is thickened, around 5 minutes.  It all depends how much water there is.  {Optional: add a few drops of stevia or any other kind of sweetener}.  

Then pour over the pancakes and enjoy.  Extremely delicious.  Sometimes, well most of the time, I have extras and I'll save some for later. All the flavors meld together and it is so delicious!
