Guacamole Chicken Egg Lettuce Wraps



These have been on my "idea list" for a few weeks now and I finally made them. And oh I'm so glad I did! They are a simple and delicious breakfast.  Packed full of vegetables and protein and topped with a garlicky guacamole. They can easily be altered to please just about anyone.

Guacamole Chicken Egg Lettuce Wraps
Serves 1-2

Ingredients: onion, garlic, broccoli, bell pepper, kale, lettuce, chicken, eggs, Emerils {recipe on the bottom of an older post}, olive oil, butter/ghee, rosemary, salt, and pepper

First, sauté in a small skillet on medium low with a mixture or ghee/butter and olive oil:
• 1/4 cup chopped onion

Cook for 5-10 minutes stirring occasionally

Add:
• 1/2 cup chopped broccoli
• 1/4 cup chopped red bell pepper

Cover and cook for 5 minutes

Add:
• 1/8 cup finely chopped kale
•1/2 cup cooked chicken {bacon or sausage would be great as well}
• 1-2 tsp Emerils {depending on how spicy you like your food}
• 1/2 Tbsp finey chopped rosemary
salt and pepper to taste

Stir and cook covered for a few minutes till chicken is warmed

Then add:
• 2 eggs

Scramble until the eggs are cooked through 

Then top onto lettuce and dollop with homemade garlicky guacamole {recipe below}. AND voila! A deliciously satisfying nutritious breakfast, lunch, or dinner {or even midday snack}.






Garlicky Guacamole

Ingredients: Avocado, tomatoes, garlic, lemon juice, salt, and pepper

Mash together:
• 1/4 avocado
• 1 tsp lemon juice
• 1 Tbsp chopped up tomato
• 1 large finely chopped garlic clove
• salt and pepper to taste
