Paleo Mushroom Salmon Patties and Homemade Emerils


These heart-shaped salmon patties exceeded my expectations in flavor and texture.  They were moist with a perfect balance of spice.  I should not have been surprised as hearts make everything better 

Mushroom Salmon Patties
Makes 2-3 patties

Ingredients: salmon fillet {boneless,skinless, and wild-caught if possible}, onions, garlic cloves, mushrooms, broccoli, Dijon mustard, kale, salt, tomatoes, smoked paprika, Emerils, coconut flour, olive oil, and butter/ghee

First, sauté in a small skillet with olive oil:
•1/4 cup chopped onion

Then add:
•1 finely chopped garlic clove
•2 finely chopped mushrooms
•1/4 cup finely chopped broccoli
•1/8 cup finely chopped kale

Cook covered on medium heat for 5-7 minutes

While cooking pulse your salmon fillet in a food processor until ground up, approx. 5 seconds. 

Then mix together in bowl:

•The ground up salmon
•Cooked vegetables
•1 tsp Dijon mustard
•1 egg white {or whole egg if doubling the recipe}
•1/8 tsp salt
•1/2 tsp smoked paprika {or regular}
•1 tsp Homemade Emerils {recipe is below}
•1/2 Tbsp coconut flour
•1/8 cup chopped tomatoes

Form into 2 medium or 3 small salmon patties {heart-shape optional }. Cook in the skillet over medium in a mixture of olive oil and butter/ghee for 2-4 minutes on each side.

Then enjoy as a burger or w/ cauliflower rice.  Usually I like to add ketchup and mustard to my salmon patties, but these were perfect just the way they are!



Homemade Emerils {or Emeril's Essence} is my family's favorite seasoning.  We use it for grilled fish, BBQing steaks, homemade potato wedges, etc.  It is the perfect everyday spice and makes everything delicious. 

Homemade Emerils

Combine together:
•2 1/2 Tbsp paprika {smoked or regular}
•2 Tbsp garlic powder
•1 Tbsp onion powder
•1 Tbsp cayenne pepper
•1 Tbsp dried oregano
•1 Tbsp dried thyme
•1 Tbsp black pepper
•2 Tbsp salt

Don't be afraid to sprinkle on anything and everything ;)

I love how you made them heart-shaped. Too cute and perfect just in time for Valentine's Day! Unfortunately I am allergic to mushrooms AND salmon or I'd be all over this.

These are amazing!! I didn't have macadamian nuts handy, so I added some crushed up bacon to the top instead. Thank you for all the recipes you post!!
