Thai Green Curry w/ Coconut Cauliflower Rice


One of my favorite meals.  It is very creamy and delicious! I served this for my dad and brother a couple of weeks ago and they loved it. 
*Dairy-free, Gluten-free, and Grain-free. Whole30 and Paleo approved.

Thai Green Curry
Serves 1-2 

Ingredients: coconut oil, ghee/butter, coconut milk, green curry paste, vegetables {carrots, broccoli, bell peppers, mushrooms, cauliflower, etc.}, cooked chicken {or any other protein}, basil, lime or lemon juice, salt, and pepper

On the stove in a medium-large skillet add: 
•1/2 Tbsp coconut oil {optional}
•1/2 Tbsp ghee/butter {optional}
•1/2 a can coconut milk 
•1-2 Tbsp green curry paste 

Mix together then add: 
•1-2 cups chopped up vegetables

Let simmer for 5 minutes 

Then add: 
•1-2 cups cooked chicken or any other protein

Simmer for another 5-10 minutes until the vegetables are cooked

Then add: 
•3 Tbsp of chopped up basil 
•juice of 1/2 a lime or lemon
• salt and pepper to taste


Cauliflower Coconut Rice
Makes 4-5 cups

Ingredients: cauliflower, coconut shreds, coconut oil

Chop up a head of cauliflower into 4-5 pieces. Steam for 10-15 minutes.  Do not steam the cauliflower too much.  It's better to have it more on the underdone side.  Then pulse in a Cuisinart or any food processor until it resembles rice. 

Then add:
•1/2-2/3 cup coconut shreds {optional}
• 1/2 Tbsp coconut oil {or butter}

*Serve the Thai Green Curry over the Cauliflower Rice {Can substitute brown or white rice}

yummy! This will be my first meal when I start the Paleo. :) Where do you find Green Curry paste?

Gabs!!! I already miss you SO much! COME BACK NOW :'(! Anyways, ha, I usually get mine at Sprouts. It is the Thai brand (I use their organic coconut milk as well) and it comes in a small little jar. You should be able to find it at most grocery stores. I also heard Trader Joes has a good one, but I have not tried it yet! Let me know if you try another brand... I'd love to know if there are some good ones out there! Oh and also, you can make it if you want. It takes more work though. Maybe I'll get ambitious one day:)

I just started making cauliflower rice this week. Love it and now I need to try this recipe with it. Sounds fantastic.

aww yes! I love cauliflower rice as well! Such a great alternative to regular rice as it's not as filling and it's a vegetable:)! I would love to know if you do try this recipe:) Any feedback would be great appreciated!!!
yay!!! i made almost this exact dish this week...great minds must think alike--or at least eat alike! looks awesome :) i love making thai food at home so i can skip all the sugar and soy!

I loooove this recipe!!! Who would've thought that cauliflower could be a rice Substitute ;) I'm not a fan of coconut flavor (at all) but this one is just delicioiuusss!!! I wanna try it with almonds instead of coconut though (flour, butter, shredded almonds) ;)

i made this last night and had my brother in law over who REALLY needs to start watching his foods and he absolutely loved it, as did we all. DELICIOUS. i've been making cauliflower rice for awhile now and love it, but with the added curry, it was amazing. I love chicken massaman curry from our local thai place, so i'll just be making this now instead! THANKS!
I'm Thai/ Indian and had just a small suggest for this receipe to make it cleaner. I know even though you put it as optional I just want to say that ghee is not at all necessary for making green curry and also ghee and butter are similar. However, ghee is often referred to as Indian butter which has high amount of saturated fats. for those of you that have no idea I would suggest not using any ghee. however, if you do need butter you can use organic ones. yet again, in green curry we do not use butter of any kind.
