Chocolate Macadamia Nut Ice Cream {Sugar-free and Dairy-free}

  

I first tried banana ice cream in Door County, Wisconsin from one of my family's favorite custard places. However, the ice cream was only banana, so of course it just tasted like banana and I was not all that impressed.  Yesterday, I tried creating my own ice cream with the banana ice cream idea. The outcome was this chocolaty, rich goodness. You can barely taste the banana and the dehydrated macadamia nuts add such a great flavor!

Chocolate Macadamia Nut Ice Cream 
{Sugar-Dairy and Dairy-Free}
Serves 2

Ingredients:  frozen ripe bananas, cocoa powder, homemade almond milk, nuts or nut-butter {optional}, and stevia {or alternative sweetener like honey or maple syrup}

In a food processor place:
• 2 large frozen ripe bananas {sliced into several pieces}
• 1/4-1/3 cup cocoa powder
• optional: 1-2 Tbsp of a nut butter {or small handful of nuts. I used my soaked and dehydrated macadamia nuts}

Pulse for a minute

Then slowly add until you reach your desired consistency:
• 1-2 Tbsp almond milk

Pulse until well blended and creamy

Lastly, sweeten to your liking with:
• a few drops of stevia {honey or maple syrup}

Once you have the ice cream to your liking serve with your favorite toppings {coconut shreds, cacao nibs, and almond slivers} and eat right away or store in the freezer for later.

Since I definitely over-indulged over the Easter break, I am going to bookmark this recipe so I can make it when I can look a sweet treat in the eye again..... like maybe next week!!! xx

Last night I was craving chocolate soft-serve, and made this! I didn't have any almond milk, so I used a little coconut milk and also put in a tablespoon of almond butter. Oh my goodness! Sooooo good! Very creamy, and chocolaty. I may or may not have licked the bowl clean. I have some bananas in the freezer so I can make it again tonight! Thanks for yet again, another fabulous recipe!
This looks delicious. This morning my kids and I were watching "Daniel Tiger's Neighborhood". (It's essentially a modern spin-off of "Mr. Roger's Neighborhood". My daughter likes "Daniel", but didn't like the first episode of "Mr. Roger's" that my husband found either on Netflix or Hulu, but she better understood some of the things on "Daniel". I digress.)

There was a recipe for "Banana Twist" on the show today (I think that's what it was called). Daniel's mother took frozen bananas and put them in the blender for dessert. We already do that with already frozen fruits.

This looks to be a good way to elaborate on what we saw on Daniel (that my daughter seemed to like). Since I mentioned the other frozen fruits, we might try it with that, too. If we use bananas, though, I'll skip the sweetener. I have a vegan banana bread recipe that I don't put sugar in because the bananas sweeten it nicely. I also have a banana chocolate chip cookie recipe that I don't put sugar in because the bananas and chocolate chips sweeten it.
